I had them laying in the garage since 2010. I had them at such a low price back then that I could not say no.
All they need is to be re-primered, painted and clear coated. Now I want them charcoal or black. What color would you paint them?

I'd stay away from black since the car is black, too. I've never liked that look, or black rims in general if they don't have a white/chrome/etc lip.

Plastidip is a bitch and a half to get off. I've spent the better part of the last 2 weeks with 4 blisters trying to get them off a set of RPF1s that I bought last summer

Yes. Stock NC Miata wheels are mostly boring. RX8 wheels are at least 5-spoke, and look a bit sporty.
On a dark color car like that, I would go with gunmetal or bronze.
If you really want something a bit bold... a hyper-black or smoke-chrome look would be cool... not full bright chrome, darker, but still mirror-reflective.
Black is too monolithic, and tends to hide the wheel design and just look like a hole in the bodywork, or over-emphasize the brake discs, and make the tires always look gray, rather than black, because the wheels are almost always darker than the tires.

Plastidip has a scrubby texture that I really hate. Cleaning them is a nightmare.

That name of mine came from last year, when my friend had a roommate who helped to fix our cars. we st the rice cooker before we got wrenching and whenever we relaxed in my dorm, he said "mmm. I smell rice!" in the same way Pinky from Pinky and The Brain dreamed of cheese. It stuck with me, even after he moved.

NO! Whatever you do, DO NOT DRIVE YOUR CAR WITHOUT A TIRE ON THE FRONT WHEEL. It will RUIN your wheel and probably destroy your car. You THINK it'll be okay for just like 20 or 30 miles until you can get it to the shop, but you WILL understeer off the road and end up having to be towed out of a ditch.

What about Plasti-Dip? If your matt white wheels get stained or scratched, you can simply peel the paint off and apply a new layer. Another idea: anodise your wheels to a nice metallic colour. Anodised wheels are gorgeous , but they're very prone to scratches.

Oh, I'm terribly sorry I didn't know you had to grope your wheels while driving. :P Anodising is an electrolytic process of coating a metal with a strong oxide layer that can be dyed. Basically, anodising adds a coloured oxide layer to a metal surface. I don't know if it will work on steel because anodising is usually done on a metal of a single element, like aluminium. You'll have to find out what metal your wheels are made of. I think that process will be ridiculously expensive.

Then I don't know. I suggest you find someone who anodises metals and ask about aluminium alloy wheels. If it can be done, ask for an estimated service cost.
